Winter comes in many shapes and forms (as we all know). Trying to eat a balanced diet with fresh raw veggies can sometimes be a challenge. I am always reading different blogs, websites and magazines for my inspiration to create a healthy and satisfying salad. I can also find exactly what I am looking for by roaming the produce section of my favorite grocery store. It’s amazing what delicious veggies I forget about until I am standing in front of them.
I made this beautiful salad a few weeks back and once it was assembled, it was so vibrant and crunchy, it was hard not to eat the whole bowl. Playing with your favorite dressing can increase the profile of your dish. I’m a huge rice vinegar fan, so I tend to make many different versions using this sweet & tangy ingredient. Play with the different oils you use too as they can add many different nutritional benefits to a dressing and really compliment the different profiles. I also enjoy a little sweetness in my salads and sometimes add mandarin orange wedges or another fruit to the bowl.
Adding balance to a salad by including different crunchy ingredients like radish, celery, jicama, cucumber, sprouts, nuts & much more, will take a boring winter salad to the next level!
